  • 8 oz (225g) cream cheese, softened

  • ½ cup (115g) unsalted butter, softened

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

  2. Combine dry ingredients: In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. Mix wet ingredients: In a large bowl, beat together sugar, brown sugar, oil, and eggs until smooth. Add vanilla extract.

  4. Add carrots and walnuts: Fold in grated carrots and chopped walnuts.
